A powerful eagle perched atop Yggdrasil, the tree of knowledge, is said to have created the wind, according to Norse mythology. The winds that sweep throughout the planet were produced by the eagle beating its wings. Life on Orkney is heavily influenced by wind, which frequently reaches speeds of over 100 miles per hour. Because of this, the island is devoid of trees, and the peat that the distillery uses is rich in heather and flowers rather than wood.
This sixteen-year-old pays respect to the weather in Orkney. Highland Park claims that the whisky’s “spicy and elegant character reveals” as a result of its aging in a combination of sherry-seasoned European and American oak casks.
